We have continued to apply, as much as possible, the traditional methods of cultivation and vinification,
handed down through generations, and have also adopted the lunar calendar for every step of our production.
We follow the phases of the moon for pruning, thinning, racking and bottling of our wine is only done during the waning moon,
on calm, sunny days.
No operation is performed during a full moon.
Chemical herbicides are banned from our vineyards;
instead we intervene with weeding and clipping the grass between rows when necessary.
Fertilization is carried out in a balaced way, using mainly organic products, which allows the vines to naturally absorb all the minerals,
such as iron, magnesium and calcium, found in the soil.
Due to the particular composition of the soil here, our wines, made only with indigenous grape varieties, contain many healthy elements, including considerable amounts of resveratrol, known for its antioxidant functions which hel to prevent the formation of blood clots.
The polyphenolic antioxidants in red wine can help to reduce the risk of cardiovascular disease and exert an anti-platelet action,
which seems to contribute to the inhibition of carcinogenesis.
Imbibed in tne right measure, red wine also promotes the production of hdl, or good cholesterol, and the alcohol content,
along with the resveratrol, anthocyanins and procyanidins, has a beneficial vasodilatory effect on small arteries.
